Mexican Cornbread

This is my Mother’s recipe one of my favorite dishes to make and eat. Her recipe instructions were to layer the ingredients but I do not layer I mix all of the ingredients together in one pan. It is easy to make and can easily serve as a main course; however my favorite is to serve this with red beans or cabbage soup.

1 lb browned ground beef

2 Pckg Gladiola yellow cornbread (mixed as instructed)

1 can whole kernel corn (Mexistyle, Cream style or Jalapeno) this time I used Jalapeno

1 can green chili’s

Cheddar Cheese

Salt, pepper, cumin, and granulated garlic to season the ground beef.

preparation

1.  Preheat oven to 375

2.  Brown ground beef with seasonings

3.  Mix cornbread following package directions

4.  Add the ground beef, corn, green chili’s, and a handful of shredded cheddar cheese in mixture.
