3 pound Beef brisket

3 sprigs razmarina

800 g red tomatoes

60 g pitted black olives

3 g of thyme

200 ml dry white wine

40 ml olive oil

3 cloves of garlic

10 g of fresh green basil

1 tsp salt

1.  Cut meat into large chunks, about 3x4 cm

2.  Soak the meat in white wine and rosemary, for 1 hour.

3.  Heat the oil in a frying pan, add the meat .Fry the meat on all sides until brown.The put must be deep enough to mix and fit the sauce.

4.  Blanch the tomatoes: bring to a boil 2 liters of water in a saucepan, boil tomatoes for 2-3 minutes and take them out.

5.  Pill the tomatoes from the skin and chop in the blender.

6.  Add crushed garlic, chopped basil,pitted black olives, and thyme into tomatoes.

7.  Pour the sauce into the meat, salt to taste and simmer for about 30-40 minutes, until tender.
