2 tsp baking powder

1 tsp corn starch

LMK's Easy Coconut Bread 1.  Preheat oven to 355 degrees Fahrenheit / 180 Celsius.

2.  In mixing bowl, beat eggs for 1 to 2 minutes on high.

3.  Blend in remaining ingredients.

4.  Put batter in a loaf pan lined with parchment baking paper.

5.  Bake for 45 minutes (done when a butter knife comes out of middle of loaf clean).

6.  Allow to cool before slicing. Yields approximately 20 slices.


Cooks' note:
Coconut flour might lower the glycemic response, making it a better bread for diabetics.
