Liver with Herbs

A nice liver with herbs recipe that is easy to make and hard to get wrong. The chives give this recipe a nice flavor that combines well with the butter.

2 pounds calf liver, sliced thick

1/4 cup of butter

2 tablespoons of butter

1 tablespoon minced parsley

1 tablespoon chives

1 tablespoon tarragon

2 tablespoons of lemon juice

1.  Quickly saute the liver in 1/4 cup of butter, make sure it stays pink on the inside, but darkens on the outside.

2.  Remove to hot platter.

3.  Add to pan remaining butter, herbs and lemon juice, cook for minute or two and pour over liver.
