Lemon Doughnuts with Strawberry-Lemon Glaze

Using the "Donut Express" pans and the included recipe, I made lemon doughnuts with a strawberry-lemon glaze. Extra precaution must be taken when baking doughnuts because they have a tendency to expand when cooked and not look so pretty in the results.

2 cups flour

2 tbsp baking powder

1/2 tsp salt

1/2 cup sugar

2 eggs

1 tbsp lemon extract

1 cup milk

1 tbs shortening

2 cups powered sugar

2 tbsp corn syrup

2 tbsp strawberry jam

1 tsp lemon extract

1.  For the lemon doughnuts:

2.  Apply a small amount of butter or vegetable oil to donut cups and slight rub over the area with a piece of cloth or a paper towel.

3.  In a large bowl sift together flour, baking powder and salt than add all other ingredients stirring with a spatula until mixed.

4.  Fill cups in pans 1/2 full and bake 400 degrees for 10 minutes.

5.  For the strawberry-lemon glaze:

6.  Whisk together the ingredients. Add water or milk one tablespoon at a time until thin enough to dip donuts. Allow the donuts to cool off before you apply the glaze. Glaze, than sprinkle with jimmies or sprinkles.
