1.  Cover the bottom of the tart shell with the whipped white chocolate ganache.

2.  Use a spoon to peel the kiwis and slice them into 6 or more slices each.

3.  Arrange the slices, overlapping, around the tart, starting from the outside and working in.

4.  Once you get to the center of the tart, use a knife to position the last slices.

5.  Brush the tart with apricot glaze if you like.
