Honey Simple Syrup

Last night I went to an event at Baffo, the restaurant in Eataly, where they combined with Owen + Alchemy, a local juice company. The event was cocktail centric, although we did have some delicious small bites. The concept was mixing juices with alcohol to make delicious cocktails but also something you didn't feel bad about drinking - that night or the next morning :) Next to the main bar, the head bartender was doing interactive demos on how to make their spin on a Pina Colada. Using Owen + Alchemy's young coconut milk, we mixed dark rum plus the sweet and sour mixes to make our own version. The sour mix was simply fresh squeezed lime, but the sweet mix was what really interested me. I don't like anything to sweet and in most cases sweet = sugar, so I was shocked to find out that their glistening caramel colored "sweet" syrup was just a honey mixture. As I asked the bartender more about it, he explained that it was honey, boiled with water - that's it. The honey needed to be broken down by the hot water so that it became mixable into drinks and didn't crystalize when added to a cold beverage - GENIUS! When I started to look more closely at Owen + Alchemy's juice bottles, most listed honey or agave nectar. This makes sense because although the sweet juices (like ones with fruit or berries) didn't need sweetness, some of the more green juices would benefit from a small splash. I'm not sure why but I had never considered the possibility of using honey in a juice because I fear it wouldn't mix, but alas that problem was solved with this syrup. So this morning, I made my juice like normal and added about a teaspoon (per 16 oz. juice) into my juice and WOW - the difference was almost indescribable. The honey simple syrup rounded out my juice perfectly! It was the small addition I didn't realize it needed but now my juice is forever changed. It's a real game changer and I think it could be used with any beverages - cocktails, iced tea, sangria, hot tea... the list goes on and on... Try this please - it will change your beverages forever!

1.  Place honey and water in sauce pan and bring to a boil for about 30 seconds or until honey is dissolved into water. Let cool and store in an airtight container.
