preparation

1.  In a small glass bowl mix cornstarch and salt.

2.  Stir in beet juice (or water). Microwave on high heat for 1 minute or until thickened, stirring occasionally.

3.  Add vinegar, honey and butter.

4.  Place beets in a 1 1/2 quart casserole.

5.  Pour sauce over beets. Cover and heat on high for 1-2 minutes or until heated through.
