Homemade Whole Wheat Crackers

1 1/2 cups whole wheat flour

1/2 cups unbleached all-purpose flour

1/2 teaspoon salt

2 tablespoons melted coconut oil (or butter)

2/3 cup water

sea salt (for sprinkling)

1.  In a large bowl, whisk to combine the flours and salt. Then, add the coconut oil (or butter) and water.

2.  Mix until dough sticks together and is easy to handle—you will need to knead the dough to make this happen.

3.  Turn the dough onto a lightly floured work surface. Roll it out as thin as you can get it, but make sure that it's consistent.

4.  Trim the edges to make a rectangle and toss the scraps in the bowl. Using a sharp non-serrated knife or a ravioli cutter wheel, cut 1 inch x 1 inch squares of dough.

5.  Transfer the crackers to a greased or lined baking sheet using a frosting spatula.

6.  Place the pan in a cold oven and turn the oven on to 375° F. Bake for 20 minutes, keeping an eye on them to prevent burning. Let cool 5 minutes before eating or storing.

Cooks' note:
Crackers can go from being just cooked to burnt and inedible, so make sure to keep a VERY close eye on them.
