Homemade Viennese Whirls

In United Kingdom you can buy these cookies in every shop. For a long time I have been looking for the recipe, but I couldn't find anything great. I have decided to make the recipe by myself. When I think about this Scottish cookies I am thinking about Vienna, waltz & Strauss's music.

8 Ingredients for double cookies

pinch Salt

110 g butter, softened

135 g plain flour

40 g corn starch

50 g icing sugar

2 egg yolks

1 teaspoon vanilla extract

Ingredients for buttercream

7 tablespoon unsalted butter, softened

1 cup icing sugar

4 tablespoon double cream

1 teaspoon vanilla extract

8 teaspoon raspberry jam (seedless)

1.  Cookies:

2.  Combine butter with sifted icing sugar. Mix until butter become fluffy.

3.  Add yolks, vanilla. Mix well.

4.  Sift flour, corn starch and salt. Add to butter mixture.

5.  Spoon mixture to pastry bag with fluted nozzle.

6.  Pre-heat oven to 180 C

7.  Greased baking tray. Then sprinkle it with little flour.

8.  Pipe small rosettes (remember about space between them).

9.  Place in oven and bake for about 15 minutes.

10.  Ready leave to cool.

11.  Buttercream:

12.  Beat butter with icing sugar - until butter will change colour to light cream and be fluffy.

13.  To butter mixture add vanilla extract and double cream. Beat well.

14.  Take one cookie - spread on it 1 teaspoon jam and one teaspoon filling. Cover it with another cookie.

15.  Ready Viennese Whirls decorate with icing sugar.

16.  Place cookies for about 1 hour into the fridge.
