Healthy Habanero Sausage Penne Pasta

A quick, easy, healthy meal full of delicious veggies and a little spice! Whole wheat penne pasta tossed in a broth based sauce with Kale, Carrots & Habanero Sausage!

1 lb box whole wheat penne pasta

1 teaspoon olive oil

4 links Aidells Habanero & Green Chile Smoked Chicken Sausage, sliced

2 cloves garlic, chopped

2 tbsp white cooking wine

3 carrots, cut into matchsticks

1/2 bunch kale, stems removed & leaves torn

15 oz can low sodium chicken broth

1/3 cup Parmesan cheese

salt & pepper

1.  Bring a large pot of salted water to a boil. Add your pasta and cook until al dente, times will be on the box.

2.  In a large sauté pan add the sliced Habanero sausage & olive oil. Brown on both sides, remove from pan & set aside. Using the same pan add the chopped garlic and carrots, let cook in leftover oils from sausage for about 2 minutes. Deglaze the pan with the white cooking wine, scraping up the fond with a spatula. Let the wine cook down then add the kale. Mix to coat, cover and let cook on low for approx 5 minutes. Season with salt & pepper to taste. Then add the chicken broth, bring to a simmer and continue cooking until pasta is ready.

3.  Strain your pasta and toss directly into large sauté pan with sauce. Stir to combine pasta with sauce, add Parmesan cheese and toss together to disperse. Serve hot.
