1.  Prepare a medium-hot fire in the grill. Grill the fish for about 15 minutes per inch of thickness at the thickest part, turning once halfway through the grilling.

In Italy and France, grilled fish is served with extra virgin olive oil, lemon wedges, or sometimes wine vinegar. High-quality balsamic vinegar served with a coffee spoon or even an eye dropper (so your guests get the hint not to pour over half the bottle) is also a luxurious seasoning. You can also serve one or more assorted mayonnaises, hollandaise, chutneys, salsas, or compound butters.
