Grilled Potato Skewers

I love potatoes served this way! Simmering the potatoes in salted water softens the potatoes, then grilling adds a little crunch and great grilled flavor. While I originally served the potatoes with Blue Cheese Bacon Burgers, Simply Grilled Corn & Grilled Brown Sugar-Butter Onions, the grilled potato skewers are also delicious with grilled fish, chicken, pork, lamb, or as an appetizer, Serve the potatoes with an array of sauces for a delicious, easy-to-make first course.

40-48 small round new or fingerling potatoes

olive oil

kosher salt

freshly ground black pepper

6-8 long wooden skewers

1.  Place the potatoes in a saucepan with salted water. Bring to a boil, then simmer the potatoes for 10 minutes. Drain the potatoes & set aside to cool until you can handle them, about 15 minutes.

2.  While the potatoes are cooking, soak the wooden skewers for 30 minutes.

3.  Skewer the potatoes, leaving about an inch on each side. Drizzle olive oil, then kosher salt & pepper.

4.  Grill the potatoes, with the burgers, until the potatoes are nicely browned, about 10 minutes. Remove from the grill & serve.

Cooks' note:
...these would also make a great appetizer served with your favorite dipping sauce...try a pesto, romesco or chimichurri sauce...seasoned olive oil or fat-free sour cream would be a great dipping sauce as well...
