1/3 teaspoon salt

1/8 teaspoon pepper

1/4 cup olive oil

1 medium onion, chopped (about 1/2 cup)

1 clove garlic, finely chopped

1 cup uncooked regular long grain rice

2 1/2 cups chicken broth

1/2 teaspoon salt

1 tablespoon parsley, if desired

preparation

1.  Sprinkle chicken with 1/4 teaspoon salt and the pepper. Cover and grill chicken, 4 to 5 inches from medium coals 10 minutes. Turn chicken. Cover and grill 10 minutes longer.

2.  Heat oil in a skillet. Cook onion and garlic in oil about 5 minutes.

3.  Stir in rice. Cook 5 minutes, stirring occasionally. Stir in broth and 1/2 teaspoon salt.

4.  Place chicken in rice mixture.

5.  Cover and grill 20 to 30 minutes.

6.  Add additional broth if liquid is absorbed before rice is tender.

7.  Garnish with parsley.
