Grilled Chicken Bruschetta

Grilled chicken topped with tomatoes, basil, garlic, onion, balsamic vinegar and parmesan cheese.

3 large tomatoes, chopped

1 clove garlic, minced

1 tablespoon finely chopped red onion

2 tablespoons chopped fresh basil

1 tablespoon balsamic vinegar

1 1/2 lbs boneless chicken breasts

1/2 cup balsamic vinaigrette

1/3 cup tablespoons fresh grated parmesan cheese

1.  Combine tomatoes, garlic, onion, basil and balsamic vinegar in a bowl. Let marinate at least an hour or up to 24 hours. Combine chicken breasts and balsamic vinaigrette in a zip loc bag for 24 hours.

2.  Grill chicken on high heat for 10 minutes per side (depending on how large your chicken breasts are). Don't flip until the grill releases the chicken (it won't be stuck on the grill).

3.  Serve grilled chicken with bruschetta mixture and some Parmesan cheese.
