Grilled Chicken and Pepper Pasta

A easy pasta dish which has a unique charred flavour from the grilled pepper and chicken..You can either grill the veggies and chicken in grill pan or you can use a oven like I did..I made the pasta sauce by myself,but you could use the store bought pasta sauce..I used Rotini Pasta,but you could use any shape as you like...I served this with cauliflower and cheese(yum yum right)...Will post recipe soon..Please give it a try and let me know what you think..

cups Pasta-2 (any shape)

Onion-1 chopped

Capsicum /Bell Pepper-1 chopped

-1 Chicken Breast chopped

big Tomato-4 chopped finely or pureed

tsp Oregano-1

Olive oil-2 tblspn

Garlic-6 crushed

Salt to taste

tsp Sugar-1

tsp Pepper-1

Cilantro / Coriander leaves-for garnishing

1.  Preheat the oven to the highest temperature as possible..mine went to 250°C...

2.  In a mixing bowl add chicken,onion,capsicum and mix well.Throw in the crushed garlic,salt,pepper and mix well.Put this in a tray and set this in oven..

3.  Grill the chicken and veggies for 20-30 min till the chicken is cooked and gets a little charred.Remove this and set aside.

4.  In the mean time cook the pasta in lots of salted water till cooked.Drain and set aside.

5.  Now make the sauce for this...Heat oil in a kadai..add in oregano and finely chopped tomatoes.

6.  Cook this till the tomatoes get mushy.Add salt.sugar and pepper to this and mix well.

7.  Add the grilled chicken and veggies to this and mix well.Simmer this for 10-15 mins(add water if the sauce gets too thick).

8.  Now add in the pasta and mix well.

9.  Serve hot garnished with cilantro.
