Grilled Basil Butter Corn

Sheer decadence! Sweet summer corn is steamed in its water-soaked husks on the grill, then served with melted basil-infused butter & salt. I love corn & basil together! Melting the butter keeps the corn hot, while steeping the basil in the melted butter infuses the butter with a wonderful summer flavor. You will love this recipe! Serve the corn anything, & we love it served with Summer Rubbed Chicken, Toasted Panzanella Salad & Skinny Balsamic Onion Salad.

6 ears fresh corn

8-12 large basil leaves

1.  Place the ears of corn, still in their husks, in your sink. Fill the sink with cold water & soak the corn for 30 minutes or so, occasionally turning the ears to ensure that all the husks are soaked in the water.

2.  While the husks are soaking, preheat your grill.

3.  Place the unshucked ears directly on the grill over direct heat. Grill the corn, turning occasionally, until the husks appear slightly charred, about 20-25 minutes. Remove from the grill. Allow the ears to cool slightly so you do not burn your fingers while removing the husks.

4.  While the corn is being grilled, chop the basil.

5.  When the corn is almost done being grilled, melt the butter for 30-60 seconds in your microwave in a microwaveable container. Add the basil, stirring to ensure all the basil is in the butter. Place the basil butter back in the microwave & heat for 30 seconds. Heating the butter will steep the basil in the butter, releasing its oils & flavoring the butter.

6.  Remove the corn husks & silk. Serve & pour the hot melted butter & basil over the individual ears of corn. Pass kosher or sea salt for guests to add to their corn, if desired.
