Grilled Apricots and Brie Drizzled with Honey

This sweet and buttery grilled apricot dish goes well with ice cream or with a soft cheese like Brie.

2 tablespoons granulated sugar

6 ripe apricots, halved lengthwise and pits removed

4 ounces brie cheese, cut into 4 wedges

2 tablespoons honey

4 lemon wedges

1.  In a large skillet over medium heat, melt the butter and sugar. Coat the apricots evenly with the butter mixture. Grill over Direct Medium heat until soft and warm, 5 to 7 minutes, turning occasionally.

2.  Arrange 3 apricot halves on each plate with the brie. Drizzle honey all over. Garnish with a lemon wedge for guests to squeeze all over. Serve while the apricots are warm.
