Green Tea Snowskin Mooncake

This is my last mooncake post for Mooncake Festival that is tomorrow. I made Green Tea Snowskin Mooncake with another type of snowskin flour (Pinpe Premix Powder) from Kwong Cheong Thye (???) that comes with a recipe. The snowskin dough is very easy to handle. In the beginning, you'll find that the dough is quite oily after boiling the liquid. But you'll be surprised that the dough is not oily at all after it has cooled down and the texture is very smooth like Japanese mochi. I've added some green tea powder in the boiling water to get its natural colour and you can get the taste of mild green tea fragrant flavour with the combination of the green tea lotus paste ..... simply delicious. I will definitely want to use this snowskin flour for the next Mid-Autumn Festival for sure.

225 g Snowskin flour (KWT Pinpe Premix Powder)

60 g Icing sugar

45 g Shortening

350 g Water

1/2 tsp Green tea powder

preparation

1.  Boil 350 g water and green tea powder together and cover with lid, simmer at lower heat for five minutes, leave to cool Stir well and measure green tea water to 300g.

2.  Combine kao fen and snowskin flour (KWT Pinpe Premix Powder) in a large bowl and set aside.

3.  In a pot, mix 300g green tea water with icing sugar and shortening together and bring them to boil until shortening melted, stir with a hand whisk.

4.  Pour the hot liquid mixture to the flour and use spatula to stir mixture to soft dough and leave dough to cool (you'll find the dough is quite oily at this time) then knead dough again to smooth.

5.  Measure dough to 22g and wrap in 25g green tea lotus paste.

6.  Roll it into a ball and dust with some cooked glutinous rice flour (Gao fen ??).

7.  Press firmly into mould ~~unmould it and store in airtight container.

8.  Chill green tea snowskin mooncake before consume.
