preparation

1.  In a bowl with a wooden spoon, work the goat cheese to soften it.

2.  Add 2 tablespoons of heavy cream and work it into the cheese, then add another tablespoon at a time until the mixture has the consistency of sour cream.

3.  If you like the flavor of olive oil, work in 2 or 3 tablespoons.
