Garlic butter is creamy and spreadable, but it also provides a little flavor boost to all kinds of dishes.

1 teaspoon lemon juice

1 teaspoon brandy

1/2 cup (25 g) chopped flat-leaf parsley

1.  Crush the garlic cloves on a board with the blade of a large knife. Add a large pinch of salt and work into a smooth paste.

2.  Beat into the butter with the lemon juice, brandy, parsley, and some freshly ground black pepper. Shape, wrap, and chill as for Parsley Butter.
