A rectangular tart with a simple ganache filling is a dramatic break from the usual round tart. You can use a classic ganache of equal parts chocolate and heavy cream, but if you want a denser texture use less cream. To fill a standard 9 1/2-inch tart pan, you'll need 3 cups ganache; for the 8 by 11-inch rectangle shown here, you'll need 4 cups. You can also use whipped ganache for a lighter alternative.
