Flat Peach Pie

Sometimes the best recipes I find are not from chefs, but the people who have little time to cook and love simplicity. This recipe came from a farmer I visited in Northern California. He grows the flat peaches featured here. While touring his farm, he gave me this great short and simple dessert recipe. Although the peaches are sweet enough in the summer season to be a satisfying and healthy dessert, a little enhancement every now and then can make everyone smile a little more. This dessert is still light and fruit based, so you shouldn’t feel guilty about enjoying it. It's amazing how much this truly tastes like peach pie! You don't need the crust; the almonds satisfy the need for a crunchy texture!
