Why is peanut sauce so good?? I think you could dip almost anything into it and it would taste like the best thing you ever ate. Vietnamese restaurants have the very best peanut sauce too. It's always perfectly creamy and spicy with just the right texture. I have tried A LOT of different peanut sauce recipes over the years. There are so many variations: using PB2 instead of real peanut butter, using vinegar or not, putting it over heat and the list goes on... This one finally sets itself apart and for several reasons. First, it really does taste amazing. By slowly adding in the water, you can create you desired texture without changing or watering-down the flavor at all. Second, it was simple. It can be made in less than five minutes with only five ingredients (I don't count water... and six just didn't sound as good :) ). Give it a try, you won't be disappointed. In fact, you may forget that you aren't in your favorite Vietnamese restaurant, even if it's only for a moment.

2/3 cup creamy, unsalted peanut butter
2 tbsp soy sauce or amino acids
2 tbsp Sambal Oekel
1 tbsp rice wine vinegar
1/2 juice of a lime
2 tbsp - 1/4 c warm water (to thin)
