Nice simple fish stock that just about anyone can successfully make.

5 cups of cold water

2 peppercorns

1 whole clove

1 leaf bay

sprig of parsley

1 tbsp diced carrot

1 tbsp diced celery

1 tbsp diced onion

preparation

1.  Combine all ingredients and let simmer for 1 1/2hrs. Strain through several thickness of cheesecloth. Makes 1qt of fish stock.

Cooks' note:
Use as all or part of the liquid in chowders, soups, or bisques. You can freeze the stock for later use.
