1 1/4 cups almond flour

1/2 cup granulated sugar

1/4 teaspoon salt

3 large egg whites

1/2 teaspoon vanilla extract

1/3 cup unsalted butter, melted and cooled

12 teaspoons raspberry jam

1 tablespoon powdered sugar

1.  Preheat over to 375F. Grease a muffin tin.

2.  In a small bowl, whisk together flour, almond flour, sugar and salt.

3.  In another bowl, whisk the egg whites by hand until they are foamy.

4.  Add the whites, vanilla and butter to the almond mixture and stir until blended.

5.  Place 2 tablespoons of the batter into each muffin cup. Add 1 teaspoon of the jam into the centre of each and then cover with the rest of the batter evenly.

6.  Place the muffin into the oven and bake for 15 to 18 minutes until golden brown.

7.  Let cool slightly. Sprinkle powdered sugar on top and serve warm.
