1 large tomato, chopped

2 roasted peppers, thinly sliced

1 carrot, grated

150g/5oz feta cheese, crumbled

bunch a of fresh parsley, chopped

For the dressing:

3-4 tbsp olive oil

2tbsp lemon juice

salt & pepper
