Quick, easy, light and colorful, these mini cheesecakes are a great dessert option for entertaining.

2 packages 8-oz cream cheese

2/3 cups sugar

2 eggs

2 tsp vanilla extract

1/2 tsp almond extract

8-12 vanilla wafers

1.  Beat cream cheese and sugar on medium speed until light and fluffy.

2.  Add eggs, vanilla and almond extracts and beat well.

3.  Place 12 cupcake liners in a cupcake pan. Crumble vanilla wafers and place on the bottom of each cupcake liner. Spoon batter into each liner until 2/3 full.

4.  Bake at 325 degrees for 20-25 minutes, until edges are slightly browned. Cupcakes will be puffy when first taken out of the oven but will deflate within a few minutes.

5.  Cool and top with fruit, coconut, chocolate, lemon curd, jam, etc.
