Deep-fried squid and aioli

Aioli is a sauce made of garlic and olive oil. Sometimes egg is also added for ease of mixing, but this is not considered traditional.

12 oz (350 g) cleaned squid

1 quantity Aioli

1/3 cup (50 g) flour (seasoned with salt and pepper)

Canola oil, for deep-frying

Thin lemon wedges, for serving

TOMATO AND DILL SALAD:

2 vine-ripened tomatoes (thinly sliced)

1 sprig of dill (broken into small pieces)

Maldon sea salt flakes and coarsely ground black pepper

preparation

1.  Cut the squid pouches across into rings. Heat oil for deep-frying to 375°F (190°C).

2.  Season the squid with a little salt and toss in the seasoned flour, then deep-fry, in batches, for 1 minute until crisp and golden. Drain briefly on paper towels.

3.  For the salad, layer 3 or 4 thin slices of tomato on each plate with the dill and some seasoning. Put the squid and 1 heaped tablespoon of aioli alongside. Garnish with the lemon wedges and serve.
