Decorating a cake with a rolled fondant strip and fondant polka dots

To decorate a cake as as shown here, first cover it with a sheet of rolled fondant as described below. To make the dots and strip, start with 4 ounces of fondant, divide it into four parts and color each piece. To color fondant, add food coloring a little at a time, kneading it in. When you have the colors as you want them to be, pinch off a small piece of each color and roll out to make the dots; cut them out with the large end of a pastry bag tip. Arrange the dots on top of the fondant-covered cake. Roll the remaining pieces of colored fondant into 1/8—inch ropes with your hands. Place the ropes next to each other on the work surface, and then roll the ropes together with a rolling pin so they form a multicolored band about 1 1/2-inches wide and 1/8-inch thick. Wrap this around the outside base of the cake, cutting the ends so they butt smoothly against each other.

preparation

1.  Roll out a bit of colored fondant and cut out polka dots with the large end of a pastry bag tip.

2.  Arrange the dots on top of the fondant-covered cake.

3.  Roll the colored fondant into long, thin ropes.

4.  Line the ropes up next to each other on the work surface.

5.  Roll the ropes into a thin strip.

6.  Gently peel the strip from the work surface.

7.  Wrap the strip around tha base of the cake.

8.  Cut the ends so they butt smoothly against each other and press gently to help the fonolant strip adhere to the cake.
