Crunchy Salad layered in a jar or box

A healthy and nutritious salad. A salad with lot of flavors, textures, colors and nutrition. An easy to make in advance salad, for working professionals, busy home makers and health conscious personnels. More to follow the series for some sumptious and filling salads.

Dressing :

1 tbsp olive oil

1 tsp Balsamic vinegar

salt n pepper

little lemon juice

2/3 cup Chickpeas : boiled or canned

1 Turnips : cut cubes

1/2 cup Carrots : cut in thin slices

4-5 leaves Romaine : You may use lettuce

1/2 cup Cucumbers : sliced

1 tbsp Mixed dry berries :

2 small Clementines or oranges : or your choice

1.  Start layering.

2.  Tale a deep bowl.

3.  Prepare your depressing by mixing everything well. Distribute in 2 different bowls/jars.

4.  Add chickpeas.

5.  Now add turnips. Layer with carrots now.

6.  Add your greens. Top with cucumbers and dried mixed berries.

7.  Add orange slices.

8.  Cover it up. Put it in fridge.

9.  Next morning, get up for work..pack your jar/box and enjoy at lunch.
