Crispy Mixed Vegetable Fry

A simple mixed vegetable fry. Most of the flavor comes from the crispy curry leaves. This recipe doesn’t need a lot of spices, the main flavor is from curry leaves and pepper. Hope you all try this and let me know what you think

serves: 3-4

2 cups Cauliflower, cut into bite size florets

1/2 cup Peas

1 large Potato, cubed

1 Onion, cubed

1 Capsicum, cubed

1 tsp Mustard seeds

1 tsp Cumin seeds

1 tbsp Coriander powder

1 tsp Garam masala powder

1 tbsp Pepper, or to taste

Salt to taste

1 tbsp Oil

2 leaf Curry springs

1.  Take a microwave safe bowl, add potato and cauliflower in it, sprinkle with a tsp of salt. Cover it and microwave on high for about 3 min. Take out and set aside.

2.  Add oil in a pan (kadai) and let it heat up. Crackle the mustard and cumin seeds in it.

3.  Add in Onion and fry for 1 min. Add in the par cooked potatoes and cauliflower, mix well.Season with salt. Cover it and let it cook till it gets golden brown.

4.  Add in peas and capsicum and fry for 3 min.

5.  Add in coriander powder and garam masala powder and mix well.

6.  Sprinkle with pepper and mix well.

7.  Take a small frying pan add a tsp of oil and fry the curry leaves till crispy.

8.  Throw this crispy curry leaves in to the veggies and toss well.

Cooks' note:
Serve hot with rice or roti.
