Fresh pico de gallo is tossed with a creamy lime sour cream and avocado. An easy way to dress up your family's taco night!




ingredients

10 Roma tomatoes, chopped

1 teaspoon salt

1/2 large onion, diced

1 bunch cilantro, chopped

2 large jalapenos, seeded and deveined, diced

2 large avocados, chopped

1/2 cup sour cream

1-2 large limes

1/2 teaspoon black pepper, or to taste

Additional salt, to taste

preparation

1.  1.Place chopped tomatoes on a few paper towels, spreading evenly. Sprinkle with one teaspoon salt to draw out the moisture.

2.  2.In a large bowl, add the onion, cilantro, jalapenos, and avocados. Pat your tomatoes dry and add them to the bowl. Toss to combine.

3.  3.Add the sour cream to the mixture. Squeeze the juice of the limes into the bowl (my limes weren't all that juicy, so you may need less or more).

4.  4.Stir well to combine. Taste and adjust your seasonings as necessary. Serve immediately or store in the refrigerator until ready to serve.
