Coffee & Walnut Banana Cake

Moist and rich banana cake with whole walnuts and a bitter coffee bottom layer.

3 ripe bananas, roughly cut

250g/9oz plain flour

200g/7oz sugar

cup 100ml/1/2 a sunflower oil

cup 100ml/half a milk

3 eggs

100g/3.5oz walnuts

1/2tbs baking powder

1/2tbsp salt

3tbsp instant coffee

powder sugar

1.  Preheat the oven to 200°C/392°F.

2.  1.In a mixing bowl, combine the flour, sugar, salt and baking powder.

3.  2.Gradually add the eggs, milk and sunflower oil. Mix well.

4.  3.Fold in the bananas and walnuts.

5.  4.Pour the mixture into a greased fluted cake tin.

6.  5.Combine the instant coffee with about 50ml/1/4 a cup of water. Pour on top of the cake and using a spoon, mix a bit, but do not mix at the bottom, just on top of the cake.

7.  6.Bake in the oven for about 30 minutes or until ready. Dust with some powder sugar.
