This cod linguine packs all the flavour of the ancient dish that inspired it, and can be prepared in 30 minutes or less.

14 oz cod fillets

1 tbsp salt

1 tsp black pepper

14 oz canned tomatoes

150 g white onion, diced

30 g garlic, finely chopped

70 g capers, chopped

30 g anchovies

1/2 tsp chilli flakes

20 ml balsamic vinegar

15 ml honey

1/2 tsp Dried Basil

1/2 tsp dried oregano

250 g linguine pasta

preparation

1.   1. Cook linguini according to package instructions.

2.  2. Season cod fillets with salt and pepper on both sides.

3.  3. Heat olive oil in a deep skillet.

4.  4. Pan-fry cod for 3-4 minutes per side. Set aside.

5.  5. In the same pan, sautee onions until translucent.

6.  6. Add garlic and chilli flakes. Sautee for another minute.

7.  7. Add canned tomatoes, capers, anchovies, balsamic vinegar, honey, basil, oregano and a quarter cup of water. Simmer for 15 minutes.

8.  8. Serve over linguini.
