The season change is starting to get to me. I’m the first to admit this is not my time of year. I feel like wearing black and moping around, and my head hurts – it just all begins to overwhelm me! So I like to imagine myself in a tropic beach house with coconuts and pineapples with the perpetual smell of suntan lotion. Ahhh, that makes me feel better. In that future house, there will be endless amounts of coconut bread. Coconut is one of my favorite ingredients. I don’t mind smashing a coconut open, drinking its milk, and sharing the endless bounty with my parrot Joey! It’s my oasis ingredient. Love it. Well this coconut bread is delicious. It’s soft, fluffy, and moist and the delicate coconut flavor is just everything I need. And the aroma that fills the kitchen while baking it is better than any scented candle!
