Cinnamon-Vanilla Chia Seed Pudding

I love this recipe! For something healthy, it sure is a delicious treat. It can be eaten for breakfast, as a snack, or even for dessert. Original recipe from An edible Mosaic, but adapted by me.

1 cup milk

3 tablespoons chia seeds

1 1/2 tablespoons sugar

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1/8 teaspoon salt

1.  Stir together all ingredients in a small bowl.

2.  Refrigerate overnight or until it reaches your desired thickness, stirring occasionally.

Cooks' note:
Feel free to omit the cinnamon/vanilla and add any other spices or extracts that you would like to try. So far, I've tried it maple extract.
