Cinnamon Sugar Apple Cake

A dense, buttermilk cake loaded with sweet apple chunks and topped with cinnamon sugar.

1 1/2 cup brown sugar

1/3 cup applesauce or oil

1 large egg

1 cup buttermilk

1 tsp baking soda

1 tsp vanilla extract

2 1/2 cups all purpose flour

1 1/2 cups chopped apples


1 tbsp butter, softened

1/4 -1/2 cup white sugar

1 tsp cinnamon

1.  Preheat oven to 325 F and grease a 9x13 baking pan.

2.  In a large bowl, stir the brown sugar, oil, egg, buttermilk, baking soda, and vanilla until smooth.

3.  Sift in the flour and stir until no streaks remain before folding in the apples.

4.  In a small bowl, combine everything for the topping until you have a nice crumbly mixture.

5.  Pour the batter into the pan before evenly sprinkling the topping on.

6.  Bake for 45 minutes.

Cooks' note:
Personally the sugar topping was a little too sweet for my taste so next time I will just use 1/4 cup sugar.
