Flaxseeds contain high levels of mucilage gum, this is a gel-forming fibre that is beneficial for intestinal health, this gum keeps food in the stomach for longer allowing more absorption of the food’s nutrients. For the Potato Latkes

250 g potato

20 g fresh cilantro, chopped

1 tbsp flaxseed meal

30 ml water

1/2 tsp turmeric powder

15 g potato flour

1/4 tsp pepper

1/4 tsp salt

30 ml olive oil

For the Apple Sauce

200 g apples

1/4 tsp star anise

1/4 tsp cinnamon

1/4 tsp black peppercorns

1/4 tsp black cardamom pods

1/4 tsp fennel seeds

50 g shallots

30 ml apple cider vinegar

62.5 ml maple syrup

500 ml water

1.   For the Latkes

3.  Boil potatoes for about 10 minutes.

4.  Dilute flaxseed meal in 2 tablespoons water and leave to bloom for about 5 minutes.

5.  Peel and run the potatoes through a coarse cheese grater.

6.  Combine grated potatoes, flax mixture, chopped cilantro, potato starch, turmeric powder, salt, and pepper in a bowl.

7.  Heat olive oil in a skillet.

8.  Drop loose mounds of potato mixture in the hot oil and fry over medium heat for 2-3 minutes per side.

9.  Drain on paper towels.

10.  Serve with apple sauce on the side.

11.  For the Apple Sauce

13.  Combine all ingredients in a saucepan and simmer for 10-15 minutes or until apples are fully tender. Add more water if necessary.

14.  With a potato masher, mash the apples in the pan, leaving some chunks whole.
