Chocolate Pinto Bean Pie

Never mind that this pie is made with beans, you won't taste them, I promise! A perfect April Fools dish too!

1 c brown sugar

2 eggs

1/2 c butter ( room temp)

1 1/2 c cooked pinto beans or 1 15 oz can, drained and mashed

12 oz bag semi sweet chocolate chips

1 t vanilla

1 t cinnamon

1/4 t nutmeg, allspice and cloves

1 in unbaked 9 pie shell

1.  Preheat oven to 350. With a mixer, cream sugar, eggs and butter until creamy. Add beans, vanilla and spices, blend until smooth. Place chocolate chips evenly in the bottom of the unbaked pie shell, pour filling over the chips. Bake for one hour or until a knife comes out clean, start checking at 45 min. as ovens vary. Serve with whipped cream. Omit chocolate chips if you prefer the depression era version.
