In honor of back to school and those little ones who are about to learn that “C” is for cookie, I present to you ”C” is for cookie cookies. Chili chocolate chip cookies to be be exact. How’s that for the letter “C” cookie monster?

2 sticks butter

3/4 cup plus 2 tablespoons sugar

1 cup plus 2 tablespoons brown sugar

2 eggs

3 cups flour

1/2 tablespoon salt

1 teaspoon baking powder

1 teaspoon baking soda

2 tablespoons chili powder plus more for sprinkling

1/2 tablespoon vanilla extract

1 pound dark chocolate chips

preparation

1.  Preheat oven to 350 degrees and line baking sheets with parchment paper.

2.  In a large mixing bowl cream together butter and sugars.

3.  Add eggs, one at a time, mixing well after each addition.

4.  Add flour, baking powder, baking soda, chili powder, vanilla, and chocolate and mix until combined.

5.  Using a small tablespoon, scoop cookie dough onto prepared baking sheets, about 2 inches apart.

6.  Sprinkle some chili powder on tops of cookies.

7.  Bake until lightly browned, about 15 minutes.

8.  Cool completely.
