6 large ripe tomatoes


1 1/2 c small bread cubes (3 slices)

1 tbsp minced onion

1 tbsp melted butter

1/4 tsp oregano

1/4 tsp basil

dash of pepper

1 c pot cheese

1 tbsp grated parmesan cheese

1.  Heat oven to 350 degrees F. Cut tops off tomatoes, scoop out pulp. Chop and reserve 1/2 cup firm pulp.

2.  Sprinkle salt inside of tomatoes and leave on a paper towel for 20 minutes to drain.

3.  Combine bread cubes, butter, onion, oregano, basil, 1/4 tsp salt and pepper.

4.  Add pot cheese and 1/2 cup of tomato pulp and mix well.

5.  Spoon filling into tomatoes. Sprinkle with parmesan cheese over tops.

6.  Bake in shallow pan in a small amount of water for 30 minutes.
