These little cheese puffs are a traditional French hors d'oeuvre, perfect with a glass of wine or a cocktail. You can make them any size you like, but these are bite size. Most recipes for gougeres call for Gruyere cheese, but Gruyere is a moist cheese that can make the puffs heavy. You'll have more success with well-aged Parmigiano-Reggiano or aged Gouda because they are dry and flavorful and don't weigh down the pastry.
