Champagne & Thyme Roasted Cauliflower

The refreshing taste of thyme and champagne make this roasted cauliflower a great accompaniment to any meal.

2 cloves Garlic, chopped

2 tbsp Fresh Thyme

1 Lemon, zest and juice

1/4 c Sweet Champagne (like Asti)

3-4 tbsp Extra Virgin Olive Oil, enough to coat without burning

1/2 tsp Kosher Salt

1/4 tsp Fresh Ground Black Pepper
