
Carob Apple Cake

Carob, naturally sweet powder, is an alternative to cocoa powder, however, with a different taste. In contrast to cocoa, it is free of the stimulants caffeine, theobromine, and oxalic acid, which prevent the body from using calcium and zinc. It is also used to replace the flour in gluten-free diet. This is a juicy and tasty carob cake using healthy ingredients including buckwheat flour and apples. As a garnish, we have made sweet apple chips, with which we decorated the cake along with mint leaves.

100 g dried cranberries, rinsed with hot water
50 g ground carob
75 ml grape seeds oil (or other)
150 g Greek plain yogurt, non fat
70-100 ml whole milk
3/4 cup all purpose wheat flour (or other gluten-free)
1/4 cup + 3 tbsp buckwheat flour
1 tbsp bicarbonate
3 sour apples, grated
1 tbsp powder sugar to sprinkle
5-10 leaves mint
10 apple chips
