Cappelini Con Funghi Fresca (Cappellini w/ Mushrooms)

A unique and delicious mushrooms sauce is combined w/ pasta for a delicious meal.

1 lb angel hair pasta (if you can find cappellini, definitely use it )

2 tbsp olive oil

16 oz button mushroom, sliced

6 cloves garlic, minced

1 c chicken broth

2 sticks butter, cold and diced

2 tsp dried parsley

1/2 c Parmesan cheese, freshly shredded

Salt and pepper to taste

1.  Cook pasta according to directions.

2.  While it's cooking, sauté mushrooms in olive oil until browned. Once brown, season w/ salt and pepper.

3.  In a small sauce pan over medium heat, combine broth and garlic. Bring to a boil and reduce by half. Whisk in butter, in small amounts, until all the butter in melted, incorporated and the sauce coats the back of spoon.

4.  Add parsley and stir well.

5.  Drain pasta and return to pot. Add mushrooms and sauce to pasta. Toss well to coat and mix. Serve individual portions with Parmesan sprinkled on top.

Cooks' note:
I make the sauce for this ahead of time and reheat when it's dinner time.
