Candied vanilla beans

For some desserts we make at the restaurant, such as the poached pears served with ice cream, we candy the vanilla beans, then chop them in a food processor until they turn into a powder, which we dust over the ice cream.

1.  Preheat the even to about l25°—l40°F.

2.  Cut the vanilla beans into thin strips lengthwise.

3.  Put the sugar and water in a pan and beat until the sugar dissolves. Put in the strips of vanilla bean, bring the syrup to a boil, then turn down the beat and simmer very slowly for 30 minutes.

4.  Line a baking sheet with waxed paper.

5.  Take the vanilla strips out of the syrup, shaking off the excess, lay them on the tray and put in the even until they have become completely dry, about 5 hours. Te cheek whether they are ready, take out a strip, leave it to get cold, then break it. It should snap very easily, if not, leave the strips in the even a little longer.
