Thinly sliced citrus fruits, lightly candied in sugar syrup, make an elegant tapping far tarts and tartlets. They pravide a concentrated flavor with a delightful hint af bitterness.

2 tablespoons light corn syrup

2 cups water

1.  Simmer the sugar and water until the sugar dissolves. With the orange slices in a roasting pan, ladle over the hot syrup.

2.  Cover loosely with parchment paper or aluminum foil and let cook in a slow oven for 12 hours. Drain on a cake rack and let dry slightly before using.

3.  To store the slices, arrange them, without stacking, on sheets of waxed paper.

4.  Orange tartlet decorated with candied orange slices.
