
California Roll

Before my children were old enough to enjoy real sushi, we usually ordered California roll for them instead. My son in particular loves avocado so it's one of his favorite sushi still. California roll is easy to prepare and a fun family project. Just remember to cover up the rice and don't leave finished rolls exposed. The sushi rice dries very quickly and it won't taste very good.

9 cups prepared Sushi Rice (3 cups uncooked Japanese rice)
2 cans (.6oz/170g) crab meat
8 tbsp (½ cup) Japanese mayonnaise
1/2 English cucumbers
2 avocados
1/2 lemon for avocado (optional)
9 sheets nori
1/4 cup white sesame seeds
For garnish, I used ikura (salmon roe), tobiko (flying fish roe), pickled sushi ginger, and wasabi.
You will also need:
Bamboo mat
Saran wrap
Tezu (dipping water)
1/4 cup water
2 tsp vinegar
Very sharp knife
