Bûche de Noël

A bûche de noël, literally a Christmas log, is an elaborate rolled cake decorated with chocolate buttercream to look like a log. It can be as simple or as elaborate as you like. Meringue mushrooms are a classic decoration for this dessert; you can also use marzipan leaves, berries, and stems.

1.  Cut the ends off the rolled cake (the log) at an angle.

2.  Attach them to the sides of the log with buttercream so they look like branches on the side of the log.

3.  Place one of the end wedges over the buttercream and apply more buttercream around the base of the end, holding it in place.

4.  Repeat with the other end piece at a different position on the log.

5.  Coat the log with buttercream, then use a metal spatula to make length wise streaks to simulate bark.

6.  Making Meringue Mushrooms: Meringue mushrooms are used to decorate a bûche de noël. To make them, line a sheet pan with parchment paper. Fit a pastry bag with a 1/4-inch plain tip and fill the bag with meringue. Make the mushroom stems by squeezing the pastry bag while lifting straight up so the stem narrows to a point.

7.  Make the caps by holding the bag about 1/4 inch from the parchment paper and squeezing to make a small, even, slightly mounded round.

8.  Cut a small hole in the underside of the mushroom caps to make a place to insert the narrow end of the stem. Put a tiny bit of buttercream or other filling in the hole and insert the stem. Set aside until the buttercream hardens before using.

9.  Arrange the meringue mushrooms on the log.

10.  Decorate with marzipan stems;
